Carrot Top Pesto

Have you ever cut up a bunch of carrots and wondered if you could use the tops instead of throwing them out? You have, haven’t you. Well, we did too, and that’s why we are bringing you this delicious Carrot Top Pesto recipe. This is one of the most versatile recipes on our site. You can use this to top just about anything you like. Some examples could be baked or grilled chicken, spreading it on bruschetta or even adding it to your favourite grilled cheese. The possibilities are endless with this pesto. Try out our recipe and see for yourself!
Ingredients
- Grab a few carrot (3-5)
- 1 Lemon
- 1/3 cup of paramesan cheese
- 3 cloves of garlic
- 1/3 cup olive oil
- Pinch of salt

Directions
- Start by cutting the tops of your carrots off one by one.
- Now add your 3 cloves of garlic to a food processor. Then grab your lemon and zest it into the food processor.
- Once that is done, grab a citrus juicer and squeeze the juice from your lemon into your food processor as well.
- Now add 1/3 cup of Parmesan cheese to the processor, then pour 1/3 cup of olive oil in as well
- Now add all of your carrot tops to the food processor and blend everything together.
- Once everything is done blending add a pinch of salt. Now give the food processor one more pulse and your done!


Tips
You can also add more Olive Oil if you like to reach the texture you want.
The amount of garlic in this pesto may not be for everyone. If you don’t love garlic you may want to limit how much you put in.
